  • Day 2, Anna’s Lunch

    I forgot to take a picture of dinner last night. It was Turkey and Spinach Manicotti. However, I couldn’t find any whole wheat manicotti so I ended up with penne and made more of a baked ziti type thing instead. I’m also having it again for lunch. My protein and carbs are all messed up today. I was SO starving when I woke up that I couldn’t wait until I got to work, I had to eat RIGHT THEN. But I was also running late so I just grabbed one of the low-fat granola bars I made (delicious, by the way). That is supposed to be a snack later on so maybe I will have part of breakfast as a snack and even it out. Anyway. Here is today’s lunch:

    The aforementioned turkey and spinach whole wheat pasta and mixed greens with two tablespoons of low-fat ceaser dressing.

    29g protein, 62g carbs, 534 calories. This is a supposed “low carb day” so I can’t go over 150g of carbs. But if I did my math right, I’ll only be at 139 by the end of the day. So far, the only thing I really want but can’t have is a diet Coke.

    Boot camp last night was awesome. I’m bummed I can’t go today. I realize it’s only been two days but I feel incredibly proud of myself.
